Germain Cheese Dairy

Specialists in PDO cheeses and noble cheeses from Burgundy and Champagne since 1921.

The story begins in 1921, when Henri Germain decided to settle at the crossroads of Burgundy and Champagne and founded his own dairy, specialising in the production of soft cheeses.

A few decades later, his son Pierre gave the cheese dairy a new direction by learning from local farmers the ancestral skills behind the making of two cheeses that had largely disappeared: Époisses and Langres. These cheeses would later be recognised as AOC, then PDO.

Today, the Germain brand has lost none of its unique, authentic know-how — quite the opposite. It stands for time-honoured, hands-on craftsmanship, where patience is essential, notably in the transmission of techniques, gestures, and traditional cheesemaking expertise.

Epoisses AOP

Made with whole milk that is slowly coagulated, gently moulded and drained for 24 hours, it is then salted. Époisses is aged in the cellar for at least four weeks and washed with Marc de Bourgogne. This washing is repeated at least five times by our cheesemakers to achieve the beautiful orange colour that characterises our Époisses. Its well-balanced, bold and fruity flavour, along with its creamy, melt-in-the-mouth texture, makes it truly unique.

Langres AOP

A member of the washed-rind soft cheese family, Langres is easy to recognise by the hollow—known as the “fontaine”—that forms on its upper surface. This PDO cheese is aged using the traditional method, with successive “washings” that give it its beautiful orange hue. Its distinctive character lies in being powerful on the nose yet mild on the palate.

Triple Crème

Our Triple Crème is inspired by the tradition of cream-enriched cheeses such as Brillat-Savarin. A soft cheese with a bloomy rind, it offers a rich, melt-in-the-mouth texture and a deliciously creamy flavour.

Affiné au Chablis

A true regional specialty, Affiné au Chablis is a cow’s milk cheese. This washed-rind soft cheese is rubbed with Chablis white wine, which gives it its refined, distinctive flavour. It has a melt-in-the-mouth texture, and its rind develops a lovely creamy colour with orange tones that deepen to a copper hue as it matures.
